In cooperation with the Henderson County Master Pomology Program, we initiated an effort to monitor apple fruit maturity in commercial orchards in Henderson County, NC. The goal of this program is to provide timely updates regarding fruit maturity of several apple cultivars in the region. Data will be presented weekly to commercial apple growers via web-based updates to partly aid in harvest management decisions. Please note that the data presented is limited to the specific orchard block that we used for sampling. Do not assume that fruit at your location are at the same stage of maturity. To be clear, there is no substitute for regular monitoring of fruit quality parameters at your own operation.
2026 Apple Maturity Program [7.28.26]
Weekly Update (07.28.2026)
Frequent and heavy rainfall has complicated field activities for many. We observed 9.3 inches of rain over the past 30 days at the Mountain Horticultural Crops Research and Extension Center. This is 4.7 inches higher than the 36 year average for this 30 day period (Jun 29 to July 28; data courtesy of the NC State Climate Office).
Additionally, average mean air temperature (74.8°F) and average minimum air temperature (66.7°F) during this 30 day interval are the warmest on record over the past 34+ years. Growing degree day (GDD) accumulation in 2026 is record-breaking and is 277 GDD higher than the 26 year average (Figure 1). This suggests that apple cultivars may have advanced maturity relative to a "normal" year. Advanced maturity can lead to multiple production challenges and needs to be taken into consideration with the timing of preharvest drop management interventions, harvest logistics, and labor availability.

Block-to-block variation in fruit maturity is profound in 2026. For example, there are some Gala orchards on the same farm that have advanced maturity and are already being harvested, while others remain immature. Dr. Mike Parker observed differences of up to 4 lbs in firmness between two Gala blocks in tests earlier this week. Regular monitoring and testing is the only proven method to determine optimal harvest timing for your target market - no one wants to fumble the ball at the goal line!
Sweet Maia® (MAIA-SM) fruit quality parameters are all on target for immediate fresh market sales as average starch pattern has increased to 6.7 this week (Table 1, Figure 2).
'Ginger Gold' has exceeded last years harvest benchmarks in all fruit quality parameters and is on the mark for harvest at this pick-your-own orchard location (Table 2, Figure 3).
'Simmons' (Buckeye® Gala) is advancing in all fruit quality parameters but still remains immature this week (Table 3, Figure 4).
Honeycrisp (Royal Red Honeycrisp®) were evaluated as part of this program for the first time this season and are immature (Table 4, Figure 5).
